Q4: How can I control it remotely using an iPhone?

Q5: Can that be charged via solar panel and power the Mini at the same time?

Yes, the LinkPower 2 can power the Starlink Mini while also charging itself through the USB-C port using solar panels. Even when the USB-C is plugged in or unplugged, it will not affect the normal power supply to the Starlink Mini.
